Quick Tomato-Avocado Snack

Whoops! I was supposed to post-this yesterday for “Meatless Monday” but I guess I’ll share it with you for “Meatless Tuesday” LOL. This is a great low-calorie, filling snack that you can make quickly. It  has “good” fats in it like olive oil and avocado and since there’s no cooking involved, you can do it at the office or where ever. The best part? The ingredients are CHEAP!

Quick Tomato-Avocado Snack

Ingredients:
2 slices organic beefsteak tomato (those are the big ones!)
1/2 hass avocado (those are the small bumpy ones, sometimes called “california” avocados)
A few leaves of fresh basil (optional)
2 organic brown rice cakes or toasted whole grain bread
cracked pepper
sea salt
1 tsp olive oil

Directions:

Mash avocado meat in bowl. Add salt and pepper to taste. Spread the avocado onto each rice cake or slice of toasted bread, then top with 1 slice each of tomato. Top tomato with drizzled live oil and more cracked pepper. Eat it like an open-faced sandwich or a pizza. A simple and healthy low-calorie and tasty snack!

    Don’t make me run to the store – I am avocado and tomato obsessed. I don’t know how to eat 1/2 an avocado at a time – a whole avocado is pretty serious calorie wise-so I guess I should look into that.

    @Dalia Aha! You see that’s why I like the organic Hass Avocados, they’re like half the size of those mutant avocado fruits you see in the regular produce section. And they’re less calories too! The other half I just save in the fridge for tomorrow’s snack, or to put on a salad.
